This chicken and brown rice recipe is a favorite in our family, and for good reason! It’s super easy to throw in the oven an hour or so before dinner time, and you can add potatoes and carrots to have your side dishes baked right in with the chicken!
I’ll admit it, I love the taste of Campbells creamed soups in recipes. What I don’t like is how unhealthy I know it is. We try to reserve buying those canned soups for holiday meals only, when you really do want to pull out those old family favorites.
While I’m far from perfect, for everyday life I try to cook from scratch. That means either making my own cream of chicken or cream of mushroom soup, or finding a different way to make a classic dish become a family favorite.
I don’t like taking the time to make creamed chicken, I’m normally running behind on getting dinner in the oven so I want to skip that step. That’s why I was thrilled to find a recipe that works really well with just water or chicken broth!
When I look up recipes online for chicken and rice I normally find recipes that call for white rice. I cook with long grain brown rice for the added health benefits, and using brown rice in recipes definitely changes the ratios of rice to water.
I actually used a mixture of brown rice and a wild rice blend here, but most of the time I just use the basic long grain brown rice. When I went to make this recipe and share pictures of it, I ran out of brown rice! We like it either way though, so you and do whatever your family likes!
A friend gave me this recipe several years ago and our family has really enjoyed this as an easy meal. All of my children love this recipe, and I consider any meal a success if six children eat it without any complaints, and ask for seconds!
It makes a great company dish, and you can serve quite a few people depending on the size chicken you buy, and how much rice you want to make. If you want to make this for a smaller size family, half the rice and water amount. If you want to make it for more than 8 people, just add more rice and water! So simple.
Instead of keeping chicken broth on hand, I always have this Better Than Bouillon chicken base on hand in my refrigerator.
I get this broth from Costco, but it’s also available on Amazon (it’s a better deal at Costco though!). I like that the broth is organic, and one jar lasts me for quite some time! I don’t even follow the directions on the back anymore, I just grab a spoon and add some to whatever I’m making.
This broth is also really good for making homemade chicken and noodles over mashed potatoes! My sister is the best at making that, and I recently watched her make the broth and discovered it’s because she keeps adding more and more of this broth until it tastes just perfect. So yummy!
Funny story – after I pulled this out of the oven and took pictures of it, I cut into the chicken to serve it for dinner. No, I didn’t cook this just for the pictures! Wouldn’t you know it, the chicken wasn’t quite done! Make sure the chicken is nice and brown before you call everyone to the table! Otherwise you will have some disappointed children, especially your hungry teen boys.
I use a big roasting pan to cook this chicken and rice in. It’s so nice to have the lid that goes on top, so you don’t have to mess with foil.
If you have extra time, you could add olive oil to the top of the chicken and put extra seasonings on top of the chicken. I use Jack Stack BBQ meat seasoning, but again I get this from Costco and it’s quite a bit cheaper there.

Chicken and Brown Rice
- 1 Whole chicken
- 2 cups long grain brown rice
- 4 cups water or chicken broth
- 1 tsp salt
- 3 TBSP Butter or Olive Oil
- 1 TBSP Dried Parsley Flakes
- Dash of pepper
- Place rice, water, salt, butter or olive oil and parsley in a large roasting pan. Put chicken on top of rice and salt and pepper chicken. Cover with lid and cook in a 350 oven for 60-90 minutes, until water is absorbed and chicken is tender.
Optional - add carrots and potatoes around the chicken on the side of the pan, so you have a complete meal ready to pull out of the oven! You can use chicken broth if you want the rice extra tasty, or just let the seasoning from the chicken flavor the rice as it cooks.
