Chicken and Brown Rice

A delicious chicken and rice recipe using long grain brown rice, and optional potatoes and carrots!

  • 1 Whole chicken
  • 2 cups long grain brown rice
  • 4 cups water or chicken broth
  • 1 tsp salt
  • 3 TBSP Butter or Olive Oil
  • 1 TBSP Dried Parsley Flakes
  • Dash of pepper


  • Place rice, water, salt, butter or olive oil and parsley in a large roasting pan. Put chicken on top of rice and salt and pepper chicken. Cover with lid and cook in a 350 oven for 60-90 minutes, until water is absorbed and chicken is tender. 

    Optional - add carrots and potatoes around the chicken on the side of the pan, so you have a complete meal ready to pull out of the oven! You can use chicken broth if you want the rice extra tasty, or just let the seasoning from the chicken flavor the rice as it cooks.
