Chocolate Oatmeal Cranberry Cookies

We love cookies around here. My husband’s favorite dessert is Chocolate Chip cookies, and if I go very long without making him some I hear a request from him to make more. He is affectionately called the cookie monster in this house. 🙂

This chocolate oatmeal cranberry cookie ties as my favorite cookie along with a regular chocolate chip cookie. I remember my Mom making these cookies, and was thrilled to find the recipe buried in a cookbook we almost threw away about a year after she died. It even has her handwritten notes and variations on the recipe that she did. So every time I make these I think of my Mom.

Chocolate Oatmeal Cranberry Cookies

2 cups butter, softened

2 cups packed brown sugar

1 cup granulated sugar

4 eggs

2 tsps vanilla extract

3 cups all purpose flour (or blend of white/wheat)

2 tsps baking powder

1 tsps salt

4 cups quick-cooking or old fashioned oats (I prefer the quick oats)

2 cups dried cranberries

2 cups semi-sweet chocolate chips

Put butter, brown sugar and granulated sugar in a large mixing bowl (I use my Bosch mixer). Beat until creamy, 2-3 minutes. Add eggs and vanilla extract, beat until smooth.

In a separate bowl, combine flour, oats, baking powder, and salt. Add to egg mixture, beating until smooth. Add cherries and chocolate chips, mixing until combined.

Place by cookie scoop or teaspoon full onto lightly greased cookie sheet. Bake 375 for 9-12 minutes. Let cool 1 minute and remove to wire rack to cool.
